Feta Spinach Poached Egg Breakfast
Toast your favorite bread or English Muffin
Place fresh spinach on each piece of bread
Slice of tomato and bacon optional
Poach eggs for four minutes, three minimum
(Olde time way is to bring water to boil, add one teaspoon of vinegar to water, a pinch of salt)
Break eggs into water and boil to your choice of how you like your poached eggs.
I top with feta cheese and chives.
A side of fresh red potatoes grilled in olive oil
Fresh fruit a must with this dish
