Poached Eggs with homemade Tomato Sausage Salsa


"Poached Eggs"

with homemade

"Tomato Sausage Salsa"

This recipe is a guest favorite.  I love to create recipes and this is one of them.

I have adorable ironstone dishes I serve this dish in.
Butter your individual serving dish
Saute together the following:
a tablespoon of olive oil
1 scallion chopped fine
small link of any flavor sausage
Brown the above and add:
1 large fresh tomatoes or caprese tomatoes
Fresh basil
1/2 t. sugar
Cook til just soft
Poach eggs in boiling water with a pinch of salt and a teaspoon of vinegar
Boil eggs 3-4 minutes
Place eggs in dish
Tomato salsa on top
Top off with cheddar cheese

Served with twelve grain toasted bread
Homemade Jam


Fresh peaches in your best individual glass dish
with a teaspoon of ricotta cheese on the side
top the the ricotta cheese with a fresh
blackberry dipped in sugar
